Cauliflower Puree

Serves 4 as a side

  • 1 cauliflower head, broken into florets
  • 50g butter
  • 1/2 cup milk or cream
  • 1tsp salt

Put all ingredients into a heavy bottomed pot over a low to medium heat. You want the lid to be on the pot. Once everything has come to a simmer let it cook for about 35 minutes, or until the cauliflower is very tender.

Give it good blitz with a hand blender or allow to cool a bit and do the same thing in a food processor. Adjust seasoning and serve

Yeah, I’m hungry now. Brilliant with grilled chicken or slow cooked beef cheeks. Mmmmm, beef cheeks.
