So good, so fast and so good for you! Just make it and your mouth and stomach will thank you.
Ingredients
- 8 pork sausages
- 2 tbsps olive oil
- 2 garlic cloves, finely chopped
- 1 red onion, finely chopped
- a goodly amount kale leaves, chopped (original recipe says 200g)
- 1 tsp cumin seeds
- 1 tsp sweet smoked paprika
- 1 tin black beans
- 1 tin chopped tomatoes
- 2 tsps brown sugar
- 2 limes
- salt and pepper
- coriander leaves, roughly chopped
Method
Slice the pork sausages into roughly 2cm long chunks.
Heat the olive oil over a medium heat in a large oven proof fry- or saute- pan. Add the sausage chunks and fry them, stirring and turning regularly until they are nicely browned, about 8 minutes. Remove them to a plate to consider their fate.
Turn the oven on to 200°.
Add the onion, garlic and cumin seeds to the hot pan, with a little more oil if needed. Stir to cook for a couple of minutes. Then add the kale and 200ml of water and stir again. Pop a lid on and let the kale soften for for five minutes.
Stir in the paprika, then after a minute add the tin of black beans (complete with their liquid), the tin of tomatoes and the brown sugar. Squeeze in the juice of one lime and stir some more. Bring this yummy mixture up to the boil and season liberally with salt and pepper.
Toss the sausage back into the pan and transfer it to the oven. Let it cook away for 15 to 20 minutes.
Serve in a bowl with coriander leaves sprinkled on top. You could also add avocado, or sour cream, or tortillas. It is delicious every way! And it makes great leftovers.
