Serves 2
– 1 chorizo sausage, sliced.
– 2 tomatoes, roughly chopped
– 1 tin cannellini beans, drained and rinsed
– 2 tbsp flat leaf parsley, chopped
– Good pinch sweet smoked paprika (optional)
– Olive oil
– 2-4 thick slices of good crusty bread
– 1 clove of garlic, cut in half
Heat a good slurp of olive oil in a pan and fry the chorizo slices. Add the tomatoes and the paprika and cook for a few minutes, then add the beans. Season well and cook until heated through. Stir through the chopped parsley and set aside while you make the toast.
Grill the bread slices and drizzle with a little extra oil. Rub each side of the bread with the cut garlic. Spoon the beans and chorizo onto the bread and serve.
