kt’s banana bread

Does anyone really want healthy banana bread? I do! If you don’t, just go right ahead and make Banana Chocolate Bread instead. I won’t mind. But for a banana bread that is just a little more like bread, and a lot less like cake (but still delicious) here we go…


Ingredients

  • 2 very ripe bananas
  • 1/3 cup brown sugar
  • 3/4 cup milk
  • 75g butter, melted
  • 1 tsp vanilla extract
  • 1 tsp apple cider vinegar
  • 1 1/2 cups wholemeal flour
  • 1 1/2 cups natural/untoasted muesli
  • 2 tsps baking powder
  • 1/2 tsp bicarb soda (or maybe a little less)
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • a grating of nutmeg


Method

    Preheat the oven to 180°. Brush a loaf tin with a little olive oil, or some butter.

    Take two medium bowls. In the first mash your bananas. Add the sugar, milk, butter, vanilla and vinegar and mix well.

    In the second bowl add the flour, muesli, baking powder, bicarb soda, salt and spices (ie all the rest of the ingredients) and mix them well.

    Add the dry ingredients to the wet and stir just until combined.

    Pour and scrape the mixture into the loaf tin and pop it in the oven to bake for 45 to 50 minutes until that trusty skewer comes out clean.

    Oh yeah! Easy. Delicious. And almost guilt free!


    Notes

    I make this using Carman’s Bircher Muesli. It adds some fruit and nuts as well as some spice, and helps make this such an easy recipe. If you don’t want to go this route (hi Ellie!) then use 1/2 cup almond meal instead. You may want to increase the spices a little to compensate, and of course you can then add chocolate to your heart’s desire.

    To make this vegan / dairy free, replace the butter with 1/3 cup light flavoured olive oil and the milk with the dairy free version of your desire (I use oatmilk).
