One weekend we were staying with Nicci’s family and she pointed out this recipe in Bill Granger’s cookbook. The next day we had breakkie with Allie & Bruce and oddly enough Allie had cooked it. I now cook it whenever we have bananas, which always seem to become over ripe.
This also makes great muffins, just cook for about 20 – 30 mins (but keep checking!)
– 2 cups Plain Flour
– 2 tsp Baking Powder
– 125 g Butter, softened
– 3/4 cup Brown Sugar (Bill says 1 cup castor but Doug thinks this is better)
– 4 Very Ripe Bananas, mashed
– 2 Eggs
– 1 tsp Vanilla Extract
– 175 g Chocolate � chips, buttons or chunks
Pre heat oven to 180 degrees. Mix flour & baking powder into a bowl (Bill would make you sift it but I am too lazy). Add everything else into another bowl & mix & mash. Now add dry ingredients (Bill would say do not overmix as it will make the bread tough but I think this is a bit of a wanky thing to say…) Grease a loaf tin and dust with flour, and put mixture in. Bake 1 & 1/4 hours ( I tend to turn the oven down to 160 after about 45 mins). It is cooked when skewer (or knife) comes out clean. Cool 5 minutes in tin, then turn out.
Cut it into portions and freeze it for kids lunchboxes, or re-heat in the microwave and serve with custard.
