Ingredients
- 700 g ravioli, filling of your choice
- good slurp of olive oil
- 2 rashers of bacon, chopped
- 2 cloves of garlic, finely chopped
- chilli flakes, amount according to taste
- 200g frozen peas
- 2 medium zucchini, coarsely grated
- zest of a lemon or two
- 2 tbsps parsley, chopped
- parmesan, grated
Method
Put a large pot of salted to water on the heat while you start to prepare the rest of the food.
Heat the olive oil in a large frying pan, add the bacon, garlic and chilli and cook, stirring, for about 4 minutes. Mmmmm smells good.
Add the peas and the zucchini and continue to cook, stirring, for another 3 minutes or so or until the vegetables are soft. Keep this mixture warm while you…
Add the ravioli to the now boiling water and cook according to the time on the packet. Drain and add the ravioli to the frying pan and gently stir to combine.
Serve, sprinkled with the lemon zest, parsley and parmesan.
