Denva’s Almond Bean Salad

One of the best bean salads I’ve ever eaten, and always in demand at picnics

Serves 4–6

Ingredients

  • 500g green beans, topped and tailed and cut in half
  • 3 rashers bacon, cut into batons
  • 125g mushrooms, sliced
  • 45g butter (or oil)
  • 1/3 cup slivered almonds
  • salt, pepper
  • 2 tablespoons parsley, chopped
  • 2 tablespoons vinaigrette

 

Methods

Cook the beans until just tender (boil approx 5 minutes), drain and pop in a bowl of cold water.

Melt the butter or oil in a fry pan over a medium heat and add the almonds. Cook them until they are a light golden brown (this won’t take long).

Add the bacon, fry another two minutes.

Add the mushrooms, keep frying until they are cooked to your liking (I like them just heated through).

Remove this yummy mixture from the pan, and drain of as much fat as you can/like.

Combine beans (drained), bacon, mushrooms, almonds, salt, pepper, parsley and french dressing in a bowl and toss.
