I got this recipe off a show called “The Best” that was on TV while we were in London. Each week 3 chefs competed to produce the yummiest dish in a particular category, but the only one I ever made myself was this winner from the “sandwich” edition. The other two chefs were probably justified in their objection that a fried tortilla stack isn’t technically a sandwich. Whatever. It’s way better than a boring old BLT or club any day of the week.
Very filling, will do 2 people as a snack or a light meal.
– 3 corn tortillas
– Several thin slices of leg ham
– 4 slices of jarlsburg cheese (substitute your favourite if you like)
– Sweet chilli sauce
– I usually also add a sprinkling of vegetable matter in an effort to convince myself this will then qualify as a balanced meal. Very thinly sliced red capsicum or some chopped coriander is a good start, but don’t add too much or the sandwich will slide apart when you try to eat it.
Construct the sandwich by topping a tortilla with a layer of cheese, then ham, a sprinkling of veggies if you like and a good dollop of sweet chilli sauce. Top this with a second tortilla and repeat the layers, finishing the stack off with the final tortilla (what you are going for here is a tiered sandwich, like a club but minus the pretension).
Heat a little olive oil in a frypan and add the tortilla stack. When the tortilla on the bottom is turning a nice gold colour and the cheese in the bottom stack is getting all melty and yummy flip the sandwich over and cook the other side.
When cooked to your satisfaction cut into wedges and serve.
